Half Baked Harvest Scalloped Potatoes
Scalloped potatoes are a classic French dish made with potatoes. They are made with thinly sliced potatoes and layered with cream, cheese, and breadcrumbs before baking until golden. This dish is usually served at the holidays, but can also be made all year round. This recipe features Idaho and sweet potatoes, which are deliciously contrasting in texture.
To make this recipe, start by making a roux. Make a roux by melting butter in a saucepan and stirring in flour. Cook for about two to three minutes, until the mixture is slightly thickened. Remove from the heat, stir in the aged cheddar cheese, and then return the potatoes to the baking dish. Sprinkle them with salt and pepper.
Next, slice the potatoes. Slice each one thinly using a vegetable slicer or mandoline. Season them lightly with salt and pepper and sprinkle with a little thyme. In the meantime, prepare the cream. It should be simmering for about 20 minutes. When the potatoes are cooked, turn them over halfway during the cooking process.
Scalloped potatoes are great when served with a main dish or alongside a salad. This delicious side dish is also a perfect side dish if you’re hosting a holiday party. You can prepare them the day before and bake them in the oven for about 50 minutes, or wrap them tightly in foil and cook them at 350 degrees for thirty minutes.
